Percentage of jewish women
If you mean the percentage of Jewish women who cover their hair/head in public, the best large survey evidence I can find is for Israeli Jewish women rather than Jews worldwide.
Israeli Jewish women
Group Wearing some form of head covering No head covering
All Israeli Jewish women ~19% 81%
Haredi (ultra-Orthodox) ~93% 7%
Dati (religious) ~62% 38%
Masorti (traditional) ~11% 89%
Hiloni (secular) ~1% 99%
Pew's survey allowed women to report more than one type of covering, so the individual categories don't necessarily add perfectly to the overall percentage.
For married women, the difference is much larger: 25% of Israeli Jewish women overall reported wearing a head covering, compared with 9% of unmarried women. Among married Haredi women, 99% reported covering their hair/head, and among married Dati women it was 71%.
So the simplest answer is:
About 1 in 5 Israeli Jewish women (19%) cover their hair/head in public, but among Haredi women it is about 93%, and among married Haredi women about 99%.
There isn't a reliable single worldwide percentage for all Jewish women, because practices differ substantially between Orthodox, Conservative, Reform, and secular Jewish communities.
